Thank you for your question. All beef sold in commerce in retail grocery stores in the USA is derived from federally inspected beef. All federally inspected beef has all specified risk materials (SRMs) removed before it leaves the slaughter plant and is safe for consumption.

You may be able to purchase beef of any age once all the SRMs have been removed from both young cattle, or cattle 30 months and older. Most beef steaks and roasts purchased in grocery stores are from cattle approximately 16 months of age. Most beef from older animals is used in sausages, some ground beef, and other manufactured beef products.
